Growing up on a farm in South Tyrol, nature has always played a big role in Theodor Falser’s life. Now, as a chef, his culinary philosophy has nature at its core, and each one of his dishes aims to showcase nature at its fullest. Thus, his cooking motto is: “Taste Nature”.

Theodor’s culinary career has seen him hold important chef positions in Ecuador, China, Malaysia and the United Arab Emirates. Now, back in his homeland, he helms the kitchen of Johannesstube at the Engel Hotel and Spa in Nova Levante. 

Theodor’s approach to cooking at Johannesstube focuses on the ingredients, each one of which is hand-picked. If the product cannot be handmade by the team at Johannesstube, it is locally sourced from the surrounding farmers and producers in South Tyrol. From rare vegetable varieties, to freshly picked herbs and ancient grains, the haute cuisine presented by Falser is authentic and awe-inspiring.

The chef’s dishes are the perfect blend of innovation and tradition, with each and every dish having its own unique identity. The menus are titled as “steps through nature”, and using the dishes, Theodor takes his guests on a culinary journey through South Tyrolean nature, enlightening each one of the senses through the experience.

Theodore has led the kitchen of Johannestube since 2014, and under his guidance, the restaurant was awarded a Michelin star within his first year.

Located at an altitude of 1,200 meters in the South Tyrolean village of Welschnofen, nestled at the foot of the majestic Dolomite mountain range, the Engel Hotel and Spa has a backdrop unlike any other. A space where one can truly embrace the grandeur of nature.

If you could take a plane ride to any restaurant in the world, just for one meal, where would you go?

I don’t need a plane. I would go to my mother, best meals ever. Simply prepared, and with lots of love.
