Off the ‘Beeten’ path

“It’s public knowledge that Lemuel went off the beaten path. While finding the way back this great little elixir came to his mind.”

 

Ingredients

30ml Tanqueray gin

15ml Irish Poitin

15ml raspberry syrup

15ml lime juice

15ml beetroot syrup

15ml apple juice

2 dashes orange bitters

Pear and cardamom foam

 

Method

Pear and cardamom foam: Add 90ml of 280ml of egg white, 90ml lemon juice, 45ml cardamom syrup and 45 pear syrup. Add this into an ISO canister. Close the lid and charge, after charging shake the canister and charge again. Leave in a fridge for 1 hour.

Pour the ingredients into a shaker, add ice and shake. Double strain into a chilled coupe glass, top with the pear and cardamom foam. Garnish with some beetroot powder.
