Ingredients
1tbsp fresh lime juice
3 slices (about ¼ inch thick) ginger
1tsp ginger simple syrup (recipe below)
½tsp ginger juice (see headnote)
1 shot whiskey, preferably Jameson
Club soda to top
A thin lime slice for garnish
Method
Fill a glass with ice. Add the lime juice, ginger, simple syrup, ginger juice, and whiskey and stir to combine. Top off with club soda and garnish with the lime slice.
Ginger Simple Syrup
(Makes ¼ cup)
118ml sugar
118ml water
28g ginger, thinly sliced
Method
Combine the sugar, water and ginger in a small saucepan and bring to a boil over medium-high heat. Lower the temperature and simmer for 5 minutes. Remove from the heat and let cool to room temperature, then strain. Leftover ginger syrup is also delicious mixed with soda water, or stir it into iced tea or lemonade.
