, Germany’s youngest Michelin-star chef, will long remember the experiences he had in Guatemala earlier this year. The chef, who was recently awarded three Michelin stars for his restaurant The Table in Hamburg, travelled to the homeland of luxury spirit Ron Zacapaand, together with other top international chefs, experienced “The Art of Slow”.
Thanks to their extensiveexperience in upscale restaurants,Kevin Fehling, Maria Marte, Diego Rossi, Daniel Engellau, Mark Rausch, Abel Hernandez, Jacques Pourcel and Mario Campollo formed a team of eight chefs to cross the Central American country together – from the growing areas of sugar cane where volcanoes throw shadows on the lowlands, to the highlands, the “house above the clouds”, where Ron Zacapa rum is aged to perfection in wooden barrels. After two days of research and tasting, the eight chefs started their creative process in the Cook Tank, where they spent a day to create a menu for the final dinner.
“I like drinking good rum and enjoy travelling the world – though so far I know Guatemala only from a short trip ashore. The approach to question the theme of time at a local and yet also international level, together with other chefs, and to create a menu from the finest ingredients, is very attractive,” said Kevin Fehling about his cooperation with Ron Zacapa.
Time is the measure of all things for Ron Zacapa. And time plays a large role in the distillery of the Guatemalan region of Zacapa, at 2,300 meters above sea level, where the maturation processis much slower. Ron Zacapa’s quality owes an inordinate amount to time. That’s why Ron Zacapa puts time centre stage with their slogan “The Art of Slow“.
Inspired by his experiences in Guatemala, Fehling will present an exclusive slow-diningdinner for guests at his restaurant The Table in Hamburg’s HafenCity on 7 June. Guests can enjoy the culinary wonders, taste the specially created Zacapa cocktail by renowned bartender of the Berlin Ritz Carlton, Arnd Heissen, be part of the professional Rum Tasting and let time stand still for a brief moment that evening.
