Set to open at the start of September this year, ‘Chicken Shop’ is a new restaurant from the Soho House Group that’s all about poultry. Chicken Shop will be in the basement space of Highgate Studios, on Highgate Road in Kentish Town which will house the third of the Pizza East restaurants, Pizza East Kentish Town.
Chicken Shop will be a restaurant dedicated to serving the finest rotisserie chicken, utilising a brand new cooking method, developed in-house.
“I’ve been thinking about this for a long time, chicken would be my last meal and so I wanted to get it exactly right. The best chicken is the one you cook at home. We’ve tried to recreate that, but affordably,”said CEO and founder of the Soho House Group, Nick Jones.
Inspired by Jones’ passion for the project, many months have been spent in research and development – from sourcing the chickens and creating a secret marinade recipe, to the invention of what the group promises is ‘a unique rotisserie grilling system’. Chicken will be the only main course available, served quartered, halved and whole. Simple sides will be triple cooked chips, creamy coleslaw, corn on the cob and salad.
Only free range chickens will be used at Chicken Shop and these have been sourced from Banham’s farm in Norfolk. These chickens will be marinated overnight using a specially developed recipe and then steamed to lock in flavour and to keep the meat succulent. Just before serving, the whole chickens are transferred to the bespoke rotisserie grill, where they are cooked over charcoal and wood. The result is a combination of juicy, perfectly cooked meat and crispy skin.
Chicken Shop has been designed in house by Jones and his team, who took inspiration from 1950s American general stores. The discreet entrance will be situated at the side of Pizza East Kentish Town, with steps leading down to an intimate space with room for 40 diners. Takeaway will also be available.
