Ingredients

50ml white rum

10ml Pear Eau De Vie

25ml lime

12.5ml 2:1 sugar to water syrup

Garnish

 

Method 

Shake and serve in a coupette. Garnish with miniature pear made using green jelly, pear sorbet quinelle and dehydrated vanilla bean or, if you’re at home, a lime twist.
