Top mixologist Salvatore Calabrese shares a few of his signature creations to freshen up the palette over the festive season…Yum!
Spicy Fifty

This cocktail is one of Salvatore’s highly recommended, which is loved by many and inspired by his former home at Fifty.


50ml Stoli Vanilla Vodka
15ml elderflower cordial
15ml fresh lime juice
10ml Monin honey syrup
2 thin slices red chili pepper


Place all the ingredients into a shaker filled with ice. Shake sharply, double strain into a chilled cocktail glass. Garnish with a red eye chili sitting on the edge of the glass

Breakfast Martini

Another of Salvatore’s signature cocktails, this is a modern classic, popular throughout the world. It has texture and a bitter sweet flavor from the marmalade which is featured.


50 ml Gin
15 ml Cointreau
15 ml fresh lemon juice
1 full bar spoon of thin cut orange marmalade


Pour all the ingredients into a shake filled with ice. Shake strain into a chilled cocktail glass. Shred some orange peel on the top of the drink as garnish. Serve.

50ml pear vodka
50ml fresh pear juice
50ml fresh apple juice
25ml fresh lemon juice
1 teaspoon honey syrup
3cms lemon grass
4 or 5 mint leaves


Cut the lemon grass into 4 or 5 pieces and muddle in the bottom of the shaker add the remaining ingredients. Add ice. Shake vigorously for 10 seconds. Strain over crushed ice using a single strainer, a few particles of mint and lemon grass will pass through the filter – this is intentional. Garnish with a sprig of mint and a lemon grass straw.
To make a lemon grass straw, trim a piece of lemon grass approx 2cms shorter than a plastic straw. Insert the straw into the lemon grass and place in the drink.
