Salmon Guru Dubai, the regional outpost of the award-winning Madrid cocktail bar, is once again redefining the limits of mixology with Eat Your Cocktail, a bold new set menu that launched on 26 November.
Available daily from 6 PM to 8 PM for AED 350, this avant-garde tasting experience reimagines what a cocktail can be, presenting it not in a glass but as a series of playful, artfully constructed bites. Each course is designed as a multisensory moment—melding taste, texture, and technique while blurring the distinction between bar and kitchen.
Among the signatures featured in the experience is The Mad Bunny, a cocktail disguised as a fried egg. It begins with a cube of cocktail mixture that is frozen and then transformed into a yolk-like sphere using an intricate poaching technique in water and a setting solution. The sphere is placed on a fluffy coconut mousse “egg white” and topped with popping candy, resulting in a single spoonful that delivers an unexpected explosion of flavour and texture.
Another highlight is Inspiración Paloma, a delicate cocktail sphere served on a bed of fresh French thyme. Using the same freezing and shaping method, the team creates a soft, translucent sphere that bursts with Paloma-inspired flavours the moment it hits the palate. Guests lift it using the thyme bundle and sip it whole, releasing a refreshing blend of redistilled tequila with basil, strawberry cordial, elderflower, and grapefruit soda.
Ultramarino introduces a creative take on cocktail “caviar.” Through precision spherification, droplets of cocktail are turned into gel-like pearls with a liquid centre, cradled inside a crisp cheese shell. When bitten into, the creamy shell breaks apart to release pearls infused with gin, mezcal, sherry wine, and rhubarb cordial—a cocktail that has rested in a clay amphora submerged in seawater for 72 hours.
The experience concludes with the Tutti Fruity Daiquiri, a golden chocolate lollipop hiding a boozy tropical surprise. Hand-moulded chocolate spheres are filled with macerated rum (Tempranillo cask) infused with fresh orange, pineapple, strawberry, lemongrass, and simple syrup. Guests are encouraged to bite directly into the sphere, allowing the chocolate to crack open and release the daiquiri in a playful final flourish.
