Garnish | Fresh thyme

Ingredients

50ml Tanqueray gin

20ml fresh lemon juice

20ml fresh lime juice

30ml thyme

30ml chamomile tea syrup

Egg white

Method

Combine 1L of syrup (1kg sugar to 1L of water) with 50g of fresh thyme and 5 small chamomile teabgas. Combine 30ml of the syrup with the rest of the ingredients. Shake and strain into a coupette. Garnish with fresh thyme.
