Located on Mayfair’s fashionable Dover Street, Quattro Passi London aims fill a void in Italian fine dining establishments in London. He aims to bring real Italian fine dining to the capital with focus on dishes of the Calabrian coast of Southern Italy.

When his restaurant opens later this month, Mellino will work alongside his family including sons Raffaele and Fabrizio and a top front of house and kitchen team to bring the Michelin starred dining experience he has become so famous for at his Amalfi coast restaurant.

Pearls of Shrimp on Chickpea Sauce, Squid Ink and Thyme Oil, Scialatielli Pasta with Cuttlefish, Prawns, Fresh Mint and a Brunoise of Pumpkin, and Madame Piemontese Golden Fried Veal Chop, Oven Roasted Potatoes and Lemon Perfumed Mayonnaise will feature on the opening menu. Specialising in light and simple dishes, chef Mellino plans to import all his ingredients fresh from Italy every day, almost exclusively using his long standing Amalfi coast suppliers.

“Ingredients hold the key to achieving beautiful dishes and authentic Calabrian flavours. Food should be skilfully yet simply prepared because at the end of the day the ingredients speak for themselves, which is why I will never compromise on my produce. It must come from home and it must be fresh.”

The chef is considered a master in pasta making and, uniquely, even his freshly-made then dried pastas will be made on the premises, using a special technique, which allows the dried pasta to cook in ten minutes rather than the conventional twenty. Quattro Passi will be the only restaurant in London to employ this method and serve this pasta.

When it comes to service and presentation, every last detail has been carefully considered, with special touches. Mellino has even personally designed individual bread baskets for soft bread versus crusty; testimony to the tireless care that has been taken in this, the launch of his first London venture.

A private members club will be opening on the lower level of the restaurant at the end of January, with exclusive access to its own luxurious and comfortable bar with 60 covers, a delicious club menu, and live music.
