The US chef shares his fantastic experience of Le Pergola, Heinz Beck’s restaurant in the Eternal City

Back in October, Mario Batali headed to Rome for a TV shoot. While there he visited a few of his favourite local restaurants, including theinformal trattorie such as Roscioli and Cesare al Casaletto. It was, however, a trip to Heinz Beck’sLa Pergola, the only three Michelin star restaurant in the Eternal City, whichturned out to be Mario’s best meal of the trip.

“I am generally averse to Michelin three-star dining experiences. There’s a stuffiness I’ve actively resisted for years. But La Pergola is different. The wood-paneled dining room, literally at the highest point in the Italian capital, harmonizes with the remarkable plates imagined by chef Beck,”says Batali.
