“I’d go to Bangkok—one of the most exciting cities in Asia. I love the vibrancy and abundance of Thai produce. There are always things to discover and, I’m sure everyone says the same, but the place just hits your every sense. Phad Kra Pao Moo is a very simple dish and very homely. I had the fortune of being invited as a guest chef at a food festival event there and the house cook of the event organiser prepared this for me after a full day’s schedule of events.
