Multi-Michelin-starred chef Yannick Alléno is bringing L’Abysse to Dubai, with the restaurant set to open at One&Only The Palm on 19 October 2026.
Following locations in Paris, Monaco and Osaka, L’Abysse Dubai will mark the concept’s first opening in the Middle East. The intimate 34-seat restaurant combines Japanese craftsmanship and the close relationship between sushi master and guest with Alléno’s Cuisine of Time — an approach centred on maturation, extraction and the role time plays in developing flavour.
The result is a contemporary meeting point between French gastronomy and Japanese omakase, with ingredients given the time and preparation needed for their character, texture and flavour to come through.
At the centre of the restaurant is a ten-seat sushi counter, where guests can watch each course being prepared and served by sushi master Ken Ishihata. A further 16 seats are arranged throughout the dining room, while an eight-seat private dining room offers a more secluded setting.
The interiors have been conceived by Laurence Bonnel and RoWin’atelier, using tactile materials, sculptural forms and controlled lighting to create a restrained backdrop to the dining experience. Works by William Coggin, Célia Bertrand, Silver Sentimenti and Rino Claessens are placed throughout the space.
Food, however, remains firmly at the heart of L’Abysse. The omakase menu unfolds across 13 sequences and five movements, structured as an emotional progression rather than a traditional succession of courses. Guests place themselves in the hands of Ishihata, beginning with delicate bites and Emotions — savoury compositions — before moving through nigiri, a transition and, finally, Amamis, the sweet conclusion.
Dishes include sea urchin with ginger mayonnaise, lightly grilled langoustine and an azuki and combawa millefeuille. Each is served at the point when temperature, texture and flavour are considered to be in balance. Wine, sake, tea and crafted infusions have also been selected to follow the progression of the menu.
The opening builds on Alléno’s existing relationship with One&Only The Palm, which is already home to the two-Michelin-starred STAY by Yannick Alléno. L’Abysse introduces a different style of dining to the resort, shaped by Japanese techniques, craftsmanship and the rituals of omakase.
Reflecting on the new restaurant, Yannick Alléno said: “L’Abysse was born from my love for Japan and Japanese gastronomy. It began in Paris, then travelled to Monaco and Osaka. Dubai was the natural choice for its next chapter, and One&Only The Palm has once again given us incredible creative freedom. Around this counter, we want to take our guests on a journey, surprise them, and offer them a magical experience. Together, our teams have created something Dubai has never seen before. The result is beyond anything I imagined, and I am incredibly proud.”
L’Abysse first opened at Pavillon Ledoyen in Paris in 2018 as Alléno’s modern interpretation of omakase. Dubai becomes its fourth location, joining L’Abysse Paris, L’Abysse Monte-Carlo and Sushi L’Abysse Osaka. Together with the opening of Casea 101 by Yannick Alléno, L’Abysse Dubai brings the Yannick Alléno Group’s portfolio to 28 restaurants.
L’Abysse Dubai opens at One&Only The Palm on 19 October 2026. Opening hours are from 6:30pm, with the last seating at 7:30pm, and the restaurant is closed on Tuesdays. The dress code is casually elegant, with full-length trousers required for men. Reservations can be made directly through L’Abysse Dubai.
