Here’s everything you need to know about the two Michelin-starred chef’s latest USA opening.

Offering flavours of the South of France in the heart of Florida, internationally acclaimed Argentine-Italian Chef Mauro Colagreco is opening a brand new restaurant at Four Seasons Resort Palm Beach.

The newly renovated property is continuing its legacy as Palm Beach Island’s only Five-Star, Five-Diamond resort by welcoming Florie’s, a restaurant in partnership with  Mauro Colagreco. Colagreco’s flagship Mirazur in Menton, France holds two Michelin stars and is ranked third on The World’s 50 Best Restaurants 2018 list.

The restaurant’s name is a nod to Florida, Colagreco’s passion for gardening and Florie’s earth conscious offerings inspired by nature, incorporating florals and herbs native to Palm Beach and the French Riviera.

“I seek out diverse parts of the world to share my cooking philosophy with new communities,” says Chef Mauro Colagreco. “Palm Beach is an ideal place for me with all of its similarities to my home in the South of France including the environment, the sun and the sea. I am excited for the opportunity to work with Four Seasons, a brand that carries values I hold dear such as excellence in hospitality and ambition.

Mediterranean Mouthfuls
Menus are inspired by Colagreco’s Mediterranean spirit, multicultural background and international vision, centred on live fire cooking with a stone hearth oven, yakitori grill and “à la broche,” a spit-roasting technique.

His instinctive cuisine is rooted in using the freshest, hand-picked ingredients transformed as little as possible and prepared in natural presentations.

For dinner, a selection of pastas, wood-fired pizzas and appetisers such as hamachi with citrus and macadamia milk are available to start. Plates, including aubergine and mozzarella with parmesan cream, are touched by fire in the hearth oven, while the yakitori grill yields boldly flavoured items such as wagyu beef with grilled red peppers.

For tipples, guests can sip garden-driven cocktails and aperitifs. Selections celebrate Florida’s abundance of citrus and the versatility of fresh herbs and botanicals sourced from the Resort’s personal garden. There will also be an extensive wine list.
