FOUR’s Chef of the Day had a relatively tough ride becoming the illustrious chef that he is today. His working life started as a child, doing paper rounds to input in the family finances, until he took the first steps of his culinary career working in Michelin star establishments, like Copenhagen’s Pierre-André and Montpelier’s Jardin des Sens.
In 2002, he landed as Chef Patron of his current restaurant, which he has led to world-renowned success. The restaurant received two Michelin stars in 2008 and was judged ‘San Pellegrino’s Word’s Best Restaurant of the Year’ for three consecutive years, only to be nominated second best this year.
His culinary philosophy strictly adheres to local foraging and sourcing, recreating his country’s landscape and culture. Sometimes slightly shocking, this chef’s dishes reflect his specialty of new-wave Nordic cuisine.
