What are your earliest memories of being interested in food?

It was at home with my family, where we had numerous moments of great cooking with my mother.

What kind of experience do you aim to give guests at Villa Louise?

We want to offer a total experience so that our guests can feel that we have thought about every single detail of hospitality and gastronomy.

What chef would you say has inspired your cooking the most?

Describe how you see your own culinary style and how you will incorporate this at Villa Louise

My aim is to search for in-depth flavours and extreme length in the after taste, but still keeping it simple. The product has to speak for itself. A cuisine with extreme respect for nature and our terroir, thatadds something extra, a wink to the far east.

What would you say has been the most memorable moment in your culinary career so far?

My study trip to Japan, the intense purity in their kitchen has touched me deeply, together with the discipline of the Japanese artisans.

If you could go back in time, what advice would you give your younger self, starting out a career in the world of food?

Keep on going, where everybody stops, you have to continue.Youcan reach the top this way and broaden your own borders.

What’s been your most embarrassing kitchen moment?

Nothing in peculiar, I learn from every experience, as well as from the bad ones.

What restaurant is currently at the top of your list to dine at?

My colleague and friend .
