An outstanding new concept

From December 2016, Hôtel Barrière Les Neiges Courchevel warmly welcomes you to two new restaurants: le Fouquet’s and BFire, an exclusive Barrière concept designed by Chef Mauro Colagreco.

December 2016 will see the Barrière group launch the new Hôtel Barrière Les Neiges, their 1st mountain venture. Nestling on the Bellecôte run in Courchevel 1850, it boasts the perfect combination of Alpine tradition, thanks to its mountain architecture, and the excellence of the Barrière expertise. True to its philosophy, the Group will offer sociable and flavoursome dining options to satisfy even the most exacting of tastebuds. The team in the kitchen will be led by the highly talented Head Chef Éric Provost, who is currently Head Chef at the Hôtel Barrière Le Royal Deauville.

The well-known Parisian brasserie Fouquet’s is opening its doors in Courchevel, with a menu that combines classic French brasserie fayre and mountain ‘must-try’ dishes. Caviar and foie gras ballotine, lobster fricassée, tartare, black truffle fondue, and of course raclette will please the most demanding palate with something to suit all tastes. You’ll still find the red velvet dining chairs and the famous Harcourt portraits of screen stars lining the walls, with the fireplace and wood panelling as a nod to traditional chalet decor. Its superb terrace boasts stunning views over the mountains, as well direct access to the slopes; the perfect place for a gourmet getaway at lunchtime or in the evening.

For a change of atmosphere and décor, BFire takes you on a journey. This new restaurant concept has been thought up by 2 starred Michelin Chef Mauro Colagreco, exclusively for Les Neiges. The concept was born from a meeting in the summer of 2015 between two men, Dominique Desseigne, who was looking for an innovative and festive restaurant idea for Les Neiges, and Mauro Colagreco, famed for his inventive and flavoursome cuisine. With his daring spirit, intuition and French restaurant, MIrazur, ranked 6th in the World’s 50 Best Restaurants, the choice of Chef was an easy one for Les Neiges.

Fire is an essential part of BFire, not only as a decorative element, but also in the key role it plays in the cooking. At lunchtime, guests get together around the authentic Argentinian fire pit on the hotel’s terrace to enjoy mouth-watering grilled meats. In the evening, diners will love the restaurant’s chic and welcoming atmosphere, as well as the delicious dishes concocted by Mauro Colagreco. Generosity and authenticity are the name of the game here, with flavours inspired from the Chef’s Italian-Argentian origins, adding a dash of Alpine produce for good measure, as with the lamb asado served with a light risotto and topped with Tomme de Savoie local cheese, instead of the usual Parmigiano Reggiano.

Mauro Colagreco adds a modern twist to the authentic flavours of his home countries, with the mountains as his backdrop.BFire takes its inspiration from Mauro Colagreco’s family background. Born at the heart of La Plata (a region whose culinary heritage is of great importance), into a family who enjoyed nothing better than a good meal together, his childhood memories are all linked to cooking and food. At Les Neiges, it’s the joy of sharing family cooking and being together that motivate him to delight the heart, soul and palate. This knowledge, handed down through the generations, combined with his excellent cooking techniques and natural creativity make BFire a unique and welcoming place.

Set at the heart of Courchevel 1850, Les Neiges offers its guests the chance to embark on a genuine culinary escapade, discovering a wealth of new experiences. Whilst Le Fouquet’s revisits the great classics of Parisian brasseries, Mauro Colagreco puts his own stamp on the flavours of Patagonia and Italy. For the first time, BFire brings the warmth and generosity of family cooking, with its unique taste and flavours, exclusively to Courchevel. Under the guidance of Head Chef Éric Provost, Le Fouquet’s turns fresh produce into generous gourmet dishes, much to the delight of its guests.
