How did you come to be a part of Taste Portugal?
Chef Koschina and Chef Hans came to dine at The Ledbury and we thought it would be a great idea to do a dinner together.
What are the defining characteristics of Portuguese cuisine?
Portuguese food is all about what has been handed down through the generations, always using fresh and local produce to create simple yet delicious dishes. Modern Portuguese cooking sees these recipes change with modern, innovative twists.
And how do these combine with your cuisine?
The importance of fresh and local produce is very important to us here at The Ledbury.
What is your experience of Portuguese cuisine?
Although it isn’t extensive, I am looking forward to seeing Chef Hans and Chef Koschina’s dishes.
Can you tell us what the aim of Taste Portugal is, and how yourself, Dieter Koschina and Hans Neuner are going to achieve this?
Our aim is to showcase the excellent standard of Portuguese food, cuisine and wine to London and to learn more about it ourselves.
Finally, if you could go anywhere to eat Portuguese cuisine at its best, where would you go?
The Ledbury (theledbury.com) on October 13th! The dinner promises to be a wonderful event.
