StreetXO London, the Mayfair restaurant from Dabiz Muñoz which has re-defined fine dining has launched its own destination cocktail bar – CircusXO.

Since opening, Chef Dabiz Muñoz has been developing the cocktail programme at Street XO known as ‘liquid cuisine’ where the team take a gastronomic approach to the cocktail list, ensuring that all drinks are playful, unexpected and provide the right balance of sweet, salt, sour and bitter flavours.

Following the positive response that the cocktail list has already received since opening, Dabiz and the team are pouring more time, attention and creativity into the bar in order to enhance the ‘liquid cuisine’, making CircusXO one of the most exciting and alluring cocktail destinations in London.

Example creations from the menu include:

Drinking Pekin Duck | Hoisin syrup, mezcal dressed with Shoaxing wine, lime juice, cucumber, soda, duck condiment

The mythic Tom Kha Kai | Galanga, coriander, kaffir lime, chili, flying fish roe, coconut

Yellow Curry | Saffron, ginger, lemongrass, mandarins, cumin, basil

Bloody Som Tum | Papaya, Josper smoked chili shrub, tequila, hibiscus

Guests looking for a more indulgent experience can peruse the ‘XO Premium Twist’ menu, a list of four classic drinks, made with super premium spirits and given a Dabiz makeover, including:

Spicy & Smoky Margarita | Wild Jabali mezcal, triple sec, Josper smoked chili shrub, worm salt

High Society Sazerac | Macallan 18, Martell XO, Pernod Absinthe, lemon twist

King of Old Fashioned | Havana Club MAXIMO, Demerara sugar, coffee bitters

Imperial Japanese Sour | Suntori Hibiki 17, yuzu, ginger, egg white

Another highlight of the CircusXO menu will be the ‘XO Drivers Experience’. Alongside two entirely new drinks, Dabiz has carefully adapted some of his most famous creations into virgin cocktails to ensure no one misses out on liquid cuisine. The list includes:

Liquid Madrizzzzz DiverXO | Violet shrub, lime ginger, jasmine perfume

Brazilian White Chocolate | Yuzu and mango chutney

Matcha and Apple Mexican Tiradito | Coriander jalapenos, worm salt

Green Seedlip and Tonic | Edamame, cucumber
