The new development kitchen known as Aulis, fomMichelin-starred chef Simon Rogan, will allow guest full access to the restaurants culinary hub.Aulis is the latest addition toFera at Claridge’s, in Mayfair, London, and officially openedon 7 January 2016. The multi-functional hi-tech space is located adjacent to the main kitchen at Fera at Claridge’s, and will function not only as a development kitchen for chefs to explore new ingredients and cooking techniques, but also as an exclusive, intimate and interactive private dining room for Fera customers.

The six-seat kitchen counter will offer guests the opportunity to book individual spaces or the table in its entirety to get ‘up close and personal’ with the chefs as they prepare and serve the multi-course dinner menus.

Named Aulis as a nodto Finnish chef and artist,Aulis Lehtimaki,Simon Rogan wanted to pay tribute to Aulis who he felt was a key collaborator in the early days of L’Enclume. The two-starredrestaurant in Cartmel, Cumbria fromRoganhas already had its own Aulis development kitchen since 2012.

The ever-changing menu will have the chefs drawing inspiration from regular deliveries of seasonal produce from key British suppliers, and, of course, from Simon Rogan’s own farm near Cartmel.

Commenting on the opening of Aulis at Fera, Simon Rogan said: With our guests’ growing appetite for discovering more about the food they eat and how it is prepared, we wanted to offer this opportunity to invite them even further behind the scenes and give them a bit of insider knowledge of our kitchen, and, above all, have some fun.

Head of Aulis at Fera, Alex Beard, previously at The Waterside Inn, will be responsible for the day-to-day operation, with the general menu development overseen by Simon Rogan and Fera’s Executive Chef Dan Cox.Designed by interiors expert Guy Oliver, Aulis at Fera features high ceilings and large windows, an exposed brick wall, a stone counter, six stools, and a range of the latest cooking equipment from KitchenAid, Mechatech Systems, the Big Green Egg, and Buchi. On the mezzanine level above Aulis will be the chefs’ study.

The menus at Aulis will be priced at £150 per person, with an optional wine pairing at £130 per person.
