Culinary nostalgia at Txoko

The Ritz-Carlton, Abama will be the home of today’slaunch of Martin Berasategui’s second restaurant at the CanaryIsland hideaway. Introducing TXOKO, based on a traditional concept from theBasquecountry, the new restaurantwillintroduce an experimental take on traditional Spanish cuisine, embracing the celebrationof exceptional food with loved ones and family, in the most heartwarming ofenvironments.
At the hands of chef Berasategui and his Executive Chef Erlantz Gorostiza,TXOKO will introduce authentic Spanish gastronomy and hospitality at its verybest. Berasategui comments “ Txoko is a place where we cook for family andfriends, inspired by precious childhood memories of time at my parents’restaurantBodegón Alejandro, a legendary legacy and proudly one of SanSebastian’s culinary institutions. Born of 40 years’gastronomic excellence, TXOKO will present a menu of impressive culinary workfrom Berasategui.Characterised by the chef’s trademarkstamps of creativity, invention, profound understanding of flavour and deeprespect for ingredients, with Erlantz Gorostiza at the helm, the restaurant willoffer a winning combination. Berasategui’s inspired interpretations of gourmetcuisine have made him a household name throughout Spain and the rest oftheworld, holding a phenomenal seven Michelin stars. Gorostiza trained withBerasategui at the chef’s Restaurante Lasarte and offers his own exceptionalculinary style and standards adding his own innovative twists to the menu atTXOKO.
Elevating heritage Spanish dishes such as stewed pig cheeks, ‘Merluza en Salsa Verde’ and ‘Croquetas’,guests will experience an imaginative journey of taste yet starting with the grassroots of Spanish cooking. Nostalgicundertones are inspired by the dishes ofBerasategui’s Mother and Aunt, transporting guests to the heart of the family kitchen,and incorporating the finest seafood, Galician meat and hand-selected vegetableingredients. A delicatecombination of diverse flavours, starting with simpleSpanish traditions are set to both surprise and warm the heart.

With heavy influences of Spanish culture andspirit, the new restaurant will offer guests a space designed to embrace thelove and performance of eating. Long trestle tables of walnut wood inspired bybuzzing taverns sit within afresh and contemporary design, incorporatingcrystal accents and black and white geometric ceramic tiling. A bar area willwelcome guests to enjoy pinchos and tapas and TXOKO’s wine cellar will offerthe perfect accompaniment toits menu.
