Knowledgeable about indigenous ingredients, chef Vallejo will be taking his creativity and elevated traditional Mexican cuisine from Quintonil to Mirazur this October 17th.

Over the next few months ten great chefs and ten great friends of Mauro Colagreco will be welcomed into the kitchens of Mirazur to cook forthe anniversary of the restaurant turning ten.

Argentinian-born chef, Mauro Colagreco,has organised an impressive line-up of guest chefs for the celebrations, which are expected to be some of the most sought after events of the year. With limited availbility for the dinners, advanced booking is highly recommended for these one-off collaborations.

The first such dinner took place on 27 May when three Michelin-starredDavid Kinchappeared as the first guest chef atMirazur. Hisunique style of cooking is recognised throughout the world for its creative combinationof Japanese and Catalan-inspired flavours. This was followed byAlex Atalaof award-winning D.O.M restaurant inSão Paulo, Brazil. The ex-punk DJ and Michelin star chef is akeen explorer of the ingredients of his native land, Brazil.Next came Andoni Luis Adurizof the Spanish restaurant Mugaritz and also known for his stintat one of the world’s best-known restaurants of Catalonian cuisine,’s El Bulli where he was situated between 1993 and 1994.OnSeptember 21st we sawVirgilio Martínezadded to the impressive list of guest chefs.Born in Peru, Virgilio Martinez has taken taken the gastronomic world by storm withhis award-winningPeruvian cuisine and clean, contemporary style.

Up next on October 17th Mirazur will welcomeMexican chef, Jorge Vallejo. Chef Vallejois at the helm of Mexico City’s Quintonil restaurant. Advocates of using products from the nation’s small agricultural producers, chef Vallejo takes a contemporary take on home cooking. Having undertaken roles in the kitchens of esteemed restaurants throughout the world, Jorge’s cuisine is refined and balanced, celebrating healthy ingredients and their harmonious flavours.

Having graduated from the Centro Culinario de México, Jorge sped into his career, working at Madrid’s two Michelin-starred Santceloni before gaining experience in the kitchens of cruise boats for Princess Cruises. Upon returning to Mexico in 2007, he refined his culinary style and technique in fine-dining establishments like Hotel Condesa dF, Pujol and Restaurante Diana until, in 2011 he had a brief stint at René Redzepi’s Noma. One year later he opened Quintonil with wife Alejandra Flores.

After the exclusive guest chef dinner with Jorge on October 17,the guest dinners will come to a close with a guest chef appearance from World’s 50 Best Restaurant’s winner, Massimo Bottura.Massimo Bottura, the infamous Italian chef of Osteria Francescana will be at Mirazur with Mauro Colagreco on October 27th for a spectucular finale dinner.
