Based in Los Angeles and currently leading five distinctive establishments across Singapore, Tokyo, and Hong Kong—with three more slated to open in Dubai in October 2017—Chef David draws upon the unique flavours and ingredients discovered in his travels around the world. His globetrotting style is exceptionally pronounced in ADRIFT, his flavour-forward Singapore restaurant and bar which lends a modern Californian savoir-faire to vibrant Asian small plates and grilled dishes.

Hosting the collaboration is Chef Ryan, whose ingredient-driven brand of modern gastronomy has established Tippling Club as an ever-evolving culinary institution for almost a decade—placing 27th in Asia’s 50 Best Restaurants and 11th in Asia’s 50 Best Bars in 2017.

Sharing a love for Japanese ingredients and influences, both chefs will join forces to present a Japan-inspired 10-course menu for each of the extraordinary evening—resulting in genuinely innovative permutations of flavour profiles and textures that are unique to their undeniable synergy.

In true Tippling Club fashion, the entire menu is complemented with pairing of Nippon-nuanced cocktails concocted using Japanese ingredients and products—curated by one of Japan’s leading bartenders. Arriving from the city that never sleeps is London-trained, Tokyo-based brand ambassador Soran Nomura of Kyrö Distillery Company, who will go behind the stick on both evenings to take diners on a tipsy trajectory through Japan.
