Julien Royer’s Odette restaurant in Singapore celebrates first anniversary with a gastronomic journey through the years…
Michelin milestone

2 Michelin-starred modern French restaurant, Odette, caps off a momentous first year with a four-night only anniversary menu that pays tribute to the eight milestones of Chef-Owner Julien Royer’s stellar 17-year career.

Join Chef Julien as he takes diners on a gastronomic journey through the years to pay homage to the people, places and above all, the produce that have influenced his Essential Cuisine approach to food. Amongst others, the menu will retrace his roots through a taste of his hometown, Cantal, Auvergne where he spent formative years living in a farm surrounded by fresh produce, and the influence of his early mentor Chef Michel Bras who instilled in him his lifelong respect for seasonality, terroir and artisanal produce.

A showcase of the fresh, exotic flavours of Polynesia and iconic spices of South East Asia will serve as a celebration of the regions that have inspired the punchy flavour profiles that have grown to complement his traditional French sensibilities. Also featuring on the menu is a loving tribute to his wife of 4-years and college sweetheart, Agnes, whose unwavering love and support have been instrumental to his culinary journey. The dish will feature her favourite ingredient of all-time, chocolate.

This year has been an incredible journey for myself and the team, said Chef Julien. This first year anniversary is the perfect opportunity to pause, and take stock of the important milestones in my life and career which have inspired the various facets of the Odette experience. Without which, we would be unable to deliver what we love best creating memories and serving dishes which showcase the most remarkable ingredients from around the world.

From 16 to 19 November, guests may savour the exclusive eight-course dinner menu. Odette diners may also enjoy an accompanying beverage supplement spanning a selection of exclusive wines curated by Odette s head sommelier, Vincent Tan, for an extra cost.

The Modern French restaurant located at the National Gallery was opened in collaboration with The Lo & Behold Group in November 2015. The restaurant was recently awarded 2 Michelin stars in the inaugural issue of the acclaimed guide.
