This September, Hakkasan Group will launch Chrysan, a Japanese restaurant in partnership with Japan’s highly respected Michelin-starred chef – Yoshihiro Murata.

Situated within walking distance from both Liverpool Street Station and Spitalfields Market, Chrysan’s position within the epicentre of the City makes it perfectly located to appeal to a worldwide clientele. The interior has been designed by Yoshiaki Nakamura, the worldwide renowned master craftsman, carpenter and designer from Kyoto.

Chrysan is Chef Murata’s first international partnership and, in conjunction with the Hakkasan Group, his aim is to establish a pioneering Japanese restaurant brand for the international market that will adhere to two key principles – sourcing the finest local ingredients rather than importing from Japan, and training the most promising local chefs rather than bringing an ex-pat team.

The restaurant will embody Chef Murata’s kaiseki – comparable to Western haute cuisine – philosophy: “I believe that, in the end, kaiseki is all about enjoyment. So, as much as possible, I try to design every aspect of the experience to create a space and time where customers can relax and eat plenty of good food, take pleasure in the conversation, and leave feeling utterly satisfied.”

The menu at Chrysan will be anchored by his protégé Daisuke Hayashi, an emerging talent of the next generation of Japanese chefs. Balancing deep tradition, delicate flavours and exquisite presentation with genuine innovation, the menu will showcase a new style of Japanese cuisine that breaks free from the confines and conventions of tradition whilst remaining truly authentic in terms of philosophy, techniques and flavours. In addition to an extensive à la carte offering, Chrysan will feature a signature kaiseki course menu for dinner, as well as a special bento set for lunchtime diners.

Open weekdays and Saturday evening, the dining room will accommodate 100, including a chef’s table for eight and a private dining room seating 12. There will also be a bar named ‘NeNe’ which will seat up to 30, and offering a unique cocktail list as well as a separate menu of lighter dishes.
