Tartar of Holstein Beef, organic foie gras, lobster, cod, venison and the for dessert plum with nougat and cinnamon – 2-star-Michelin chef Christoph Rüffer (Haerlin/Hamburg) had his debut as a guest chef at the Schleswig-Holstein Gourmet Festival this weekend.
Between each dish of his 6-course menu he found time for a visit to the Hotel Cap Polonio herb garden with Chef Marc Ostermann. Over 160 guests enjoyed the two gala evenings. Rüffer, who had already participated several times as a guest at the festival to sample the food, especially by his the Scandinavian colleagues, joins the guest chef ranks of the oldest gourmet festivals in Germany.
