This September, Abu Dhabi will play host to a rare meeting of culinary minds as two Michelin-starred French chefs come together for a special 4-hands dinner at Bord Eau by Nicolas Isnard, Shangri-La Qaryat Al Beri. For two nights only, on the 19th and 20th of September 2025, diners will be treated to an inventive 6-course menu where French refinement meets bold Asian accents.
The collaboration brings together Chef Nicolas Isnard, the creative force behind Bord Eau’s contemporary French identity, and Chef Charles Coulombeau, celebrated for his modern, Japanese-inspired cuisine. The menu promises a journey through textures and flavours: scallop carpaccio brightened with coriander, mint, peanut and lime; soya-glazed octopus served with roasted cauliflower and Tom Kha sauce; and the luxurious “Sanchoku” Wagyu beef tenderloin with Japanese rice and spinach. The evening concludes with a delicate nod to passion fruit and the art of “Yayoi,” rounded out with exquisite mignardises. Guests can also elevate the experience with an expertly curated wine pairing.
Isnard’s Abu Dhabi restaurant is known for its blend of classical French technique and global influences, while Coulombeau brings a pedigree shaped in some of France’s most prestigious kitchens, from the 3-Michelin-starred Les Prés d’Eugénie to Lameloise, as well as formative time spent in Japan. Today, he leads La Maison dans le Parc in Nancy—holding one Michelin star since 2022—and YOZORA in Metz, newly crowned with its first star in 2025. Supporting the collaboration is Bord Eau’s own Chef David Tavernier, whose international career has taken him through France, the UK, Egypt and Lebanon.
