What’s the most scientific piece of equipment in your kitchen?

I’m not sure which is the most scientific – we’ve got a gastrovac, thermometer, a PH meter, far infrared heating cabinet, oil bath, surgical scissors, surgical tweezers…

We study how to draw out the essence of something rather than to change its appearance, so we control everything to the unit and cook using over 10 kinds of methods to regulate the humidity, pressure and cell membranes. (2)

Are you passionate about liquid nitrogen?

We use liquid nitrogen every day. By using wide range of temperatures, we can broaden the capacity for expression. (2)

Could you describe your cooking style?

The beauty of the earth, a homage to the nature, the meaning of human beings’ existence, questions what life is, what eating is?…

I want to express the fundamentals and philosophies concerning this planet through me cuisine, so it does not belong to any one kind of culinary style. (1, for being exceptionally abstract)

What’s your favourite meal to make at home?

I like simple meals a lot. In terms of salad, I do not need dressing. I prefer fish that’s cooked with salt and olive oil. I rarely cook in my house, but sometimes I make pasta for my family. (0 – what, no liquid nitrogen at home?)

I would say it is my gastrovac. (2)

Are you passionate about liquid nitrogen?

It helps me do many unique things. I like it as a tool, but I wouldn’t say I’m passionate (0.5 – so close!)

Could you describe your cooking style?

My cooking style is definitely progressive. I’m constantly evolving, researching and creating, but also respecting every ingredient for what it is. (0.5, for being progressive)

What’s your favourite meal to make at home?

Churrasco. Brazilian BBQ. (0)
