In a moment when global dialogue often feels fractured, the culinary world is making a compelling counter-statement. At the heart of that belief is CONVERGENCE, a five-day international gathering hosted by Alchemist, built on the idea that food can act as a shared language—one capable of bridging borders, cultures, and continents.
From January 29 to February 2, 2026, Copenhagen will step into the spotlight as a global gastronomic crossroads. In the depths of the Nordic winter, more than 60 of the world’s most influential chefs—all ranked within the Top 100 list curated by The World’s 50 Best Restaurants—will converge in the Danish capital. Representing 26 countries across six continents, the event brings together an unprecedented concentration of culinary talent under one roof.
“I see such creativity, knowledge, and resilience among my colleagues in the culinary world, and to be able to share it with the guests at Alchemist and a wider audience in Copenhagen is a dream come true. I hope the event will resonate and have a meaningful impact both here in Denmark and throughout the world,” says Rasmus Munk, founder and head chef of Alchemist and the initiator of CONVERGENCE.
The name Convergence speaks to its underlying philosophy—things or ideas that come together. Positioned as a deliberate response to division and polarisation, the event invites collaboration over contrast. Chefs will travel from established culinary capitals such as New York, Barcelona, Bangkok and Tokyo, alongside voices from Lima, Cape Town, Mumbai, Quito and Queenstown, ensuring a genuinely global exchange of perspectives, traditions and techniques.
Each evening, more than 12 guest restaurants and bars will take part, presenting their most recognisable signature dishes and cocktails. These creations will be woven into Alchemist’s immersive dining universe, appearing alongside the restaurant’s own dishes and allowing guests to experience a rare dialogue of flavours, philosophies and culinary identities in a single setting.
While the scale of CONVERGENCE is undeniably ambitious, it is driven by a clear purpose. The core intention is to open up the knowledge, creativity and collaborative spirit found at the very top of global gastronomy, making it more accessible beyond traditional industry boundaries. Copenhagen—already home to several of the world’s leading restaurants—provides a natural environment for this exchange to take shape, acting as a hub for shared ideas and cultural connection.
The initiative extends well beyond the dining room. Alongside the dinners at Alchemist, CONVERGENCE will unfold through a broader symposium programme, featuring talks, discussions and activities designed to connect the world’s culinary elite with society at large. The programme aims to engage not only chefs and restaurateurs, but also culinary students, schoolchildren and their teachers, food producers and artisans, as well as the wider public.
