2 Michelin-Starred Chef Thierry Drapeau Hosts Bangkok Pop-Up

The talented two Michelin-starred chef will be serving up a taste of his world-renowned French cuisine later this month.

Experience authentic French cuisine courtesy of  two Michelin-starred chef Thierry Drapeau in the heart of Bangkok this month. The culinary mastermind will be heading to the five-star VIE Hotel Bangkok for a special three-day pop-up, conjuring a number of signature dishes at one of the city’s finest restaurants. 

Taking place from 30 January – 1 February 2019, join Drapeau for seven-course set dinners featuring his innovative French cooking. Following a family tradition of cooking with natural and local products, Chef Thierry initially fell in love with the art watching his father preparing the family meal every weekend. Hence commenced his own culinary career, starting a as Chef de Partie at the age of 21.

Working alongside a number of renowned chefs, he set the highest standards possible for his cooking, eventually opening his own restaurant, the Thierry Drapeau Logis de la Chabotterie in Saint-Sulpice-le-Verdon, France. He continues to impress the culinary world with his dedication to his craft, holding a coveted two Michelin stars for the past eight years. Never content, Drapeau places importance on continuous improvement. For him, a dish must be “worked on like a wine, taking time to look for “a balance combining herbaceous and floral notes; to work on the acidity, the bitterness and the sweetness”.

For his dishes, only the highest quality produce is used. He conjures dishes designed with delicateness –  low in butter but high in flavour. Additionally, he much prefers using flowers and herbs rather than traditional spices.
