I’m going to show you how to make sushi soy sauce. Sushi soy sauce is seasoned soy sauce for sushi and sashimi. When you go to regular sushi restaurant, they usually pour soy sauce, Kikoman soy sauce, yamasa soy sauce, whatever they bought it. But if you go to real, real Japanese, authentic sushi restaurant, we season the soy sauce for sushi and sashimi. That’s what I’m going to show you.
OK now, I’m going to heat up the pot, and this is one tablespoon Sake, and one tablespoon Mirin, and heat it up, until it’s boil. And let it boil about 30 seconds to one minute to get all the alcohols gone. Because Mirin is a sweet rice wine and Sake has alcohol in it. So both has alcohol in it, so you need to cook out all the alcohol.
Let it boil like 30 seconds to one minute to get all the alcohols gone. Be careful it doesn’t get ignite. So now it’s boiling, let it go, let it go. OK so now, alcohol is all gone, so I’m going to add half cup soy sauce. OK and let it almost to boil one more time then turn it off, the heat, and then that’s your soy sauce. Let it cool, and you are ready to use for the sushi and sashimi.
