10g Dijon mustard

40g cream

Olive Oil

Italian white balsamicvinegar

40grock salt

15g sugar

Salt and pepper

½ lemon

Method

Mix the cream, the mustard, salt n pepper and a few drops of lemon, reserve away in the fridge.Cut thin slices of meat, lay them down on a tray season gently of rock salt pepper and sugar, let it marinate 15 minutes.Rince the slices of meat and smoke them 15 minutes.Reserve in the fridge.

To serve

Cut circles of different size of smoked beef. Season with olive oil and vinegar. On flat plates, gently put the cream in the middle of the plat. Lay the circles of smoked beef nicely around the plate, lay around evenly the mini salad sprouts.
