Sea Bass

4 x 130gsea bass fillets

Bitter spinach

400gbitter spinach

1 fried hot chilli

40gfried leek


200mlextra virgin olive oil 15 %

20ml lemon juice

1 whole egg

Salt and pepper, to taste


Sea bass

Sear the fillets in a pan beforepeeling off the skin and letting themdry in the oven for 10 minutes at 180C. Finish the cooking in the oven at 170Cfor around 4 to 5 minutes.

Bitter spinach

Brown the oil,chilliand leek without burning it. Then add the bitter spinach and cook at a very low flamefor 2-3 minutes.

Lemon mayonnaise

Emulsify all the ingredients in a blender and serve as per picture.
