Ingredients
200g Stonecrab meat, cooked
10g walnut oil
20g shallot,chopped
10g chives,chopped
2 or 3 pcsJapanese cucumber
Elderflower syrup
200g fromage blanc
30pcs fresh sea urchin
Method
Cooked stonecrab meat, walnut oil, shallot, chives, mix together with salt and pepper and some olive oil and lemon juice.Slice Japanese cucumber to discs, marinate with elderflower syrup.Assemble as according to picture or preference.
