‘Tossing up good fortune’ with prosperity salad which symbolises an ‘abundance of wealth and long life’.It is believed the higher you toss the ingredients in the salad, the greater your fortunes will be.


1/2 roasted chicken

20g enoki mushrooms

1/2 green apple

20g pickled onion

1 carrot

1 sweet potato

20g dried jellyfish

1/2 cucumber

20g pickled ginger

¼ pomelo

2 lime leaves

5g black pak-pui mushroom

1 mango

30g mooli


50g plum sauce

2 tsp blacksesame seeds

2 tsp white sesame seeds

A handful of fresh coriander


Peel the sweet potato into thin slices. Julien to then get thin strips. Then coarsely shred the apple, pickled onion, carrot, cucumber, pickled ginger, lime leaves, black pak-pui mushroom and mango.Peel the pomelo and take out of the casings. Chop into small pieces.

Thinly slice the jellyfish.Add oil to a hot wok or pot. Once the oil is hot, deep fry the shredded sweet potatoes till cooked and the enoki mushroom. Then drain on kitchen paper.

Arrange all the salad ingredients on a large serving platter. Organise the ingredients by their colour.Toast the sesame seeds in a dry frying pan, then place in a small side plate.

Debone the roasted chicken and slice into thick strips to be placed on the centre of the salad. Then place the deep fried sweet potato and the thin sliced lime leaf on top.Scatter over the salad the sesame seed, and the plum sauce, the coriander.

Gather your friends and family around. Scatter the toppings over and drizzle the sauce over. Have everyone use their chopsticks to toss the salad.
