20g lime juice
20g mirin
50g white miso paste
50g yuzu juice
100g extra virgin
Olive oil
50g oyster juice

8 ostra regal oysters #3
Dry miso, sprinkle
Mix sprouts, sprinkle
Oyster tartare
Chives, sprinkle
Lime zest, sprinkle
50g miso-citrus
Vinaigrette
Method
Miso-citrusvinaigrette
Mix all the ingredients and keep the vinaigrette aside.
Oysters
Open the 8 ostra regal oysters. Keep 4 aside and use the 4 others for tartare. Dice the 4 oysters and keep their juice and shells aside. Mix the oysters with lime zest, chives and the vinaigrette miso-citrus. Dress the tartare in the saved shells. Add the whole oyster on the tartare. Sprinkle some virgin olive oil on the top, dry miso and garnish it with mix sprouts. close the shell with another one. Add some olive wood chips smoke using a smoking gun.
