Ingredients

Bulbs

30g red onion

30g white onion

30g shallot

10g ginger

5g coriander seeds

100g sugar

100ml vinegar

50ml vodka

Strawberry

100g strawberry

30g lemon

10g lemongrass

Garnish

Chive flower

Edible white flower

Cherry tomato

Method

Bulbs

Peel all the bulbs and cut into different shapes. Boil the vinegar and sugar; add the coriander seeds, ginger and vodka. Put all the bulbs in the hot mixture and reserve for one night.

Strawberry

Blend half of the strawberry with lemon and lemon grass, strain and reserve cold.Cut the remaining strawberry into thin slices and set aside.

Plating

Strain the bulbs, place on a paper towel to remove the excess syrup. Place the bulbs on plate; add the sliced strawberry, flower and cherry tomato. In the centre, pour the strawberry syrup and vodka. Serve very cold.
