Relais & Châteaux 60th Anniversary Guest Chef Dinner “Soirée La Belle Epoque”

Relais & Châteaux is a family of Hoteliers and Chefs across the globe who are driven by the shared passion and personal commitment of ensuring that their guests’ experience is distinctive and enjoyable. 2014 marked the 60th birthday of the founding of Relais & Châteaux.

To celebrate this milestone occasion, the North American Delegation of Relais & Châteaux created a series of collaborative dinners with 27 legendary Chefs from around the world. As a Relais & Châteaux member property, Eden Roc at Cap Cana hosted world famous Grand Chef Michel Rostang to create with our Executive Chef, Hernan Griccini, a once in a lifetime birthday party.

The five-course menu consisted of Caviar «Malossol», smoked Royal Sturgeon, Black Spaghetti Cannelloni by Grand Chef Michel Rostang, served with Pouilly-Fuissé, Calvet Grande Reserve, 2012; Langostino Lobster Tail served cold, Tarragon syrup, Cream of Almonds and Shellfish, Fresh Herbs by Grand Chef Michel Rostang, served with Pouilly-Fuissé, Calvet Grande Reserve, 2012; Foie Gras Fumé rôti entier, Risotto-style Artichokes, aged Port wine reduction, by Grand Chef Michel Rostang, served with Alsace Pinot Blanc, Calvet, 2012 ; Roasted Fillet of Lamb, carrot purée, organic baby vegetables, Coffee jus by Chef Hernán Griccini, served with Gevrey-Chambertin, Joseph Drouhin, 2005, and Surprise Chocolate Dome with mousse of coconut and Brugal Titanium Rum by Chef Hernán Griccini, served with Champagne, Laurent-Perrier, Demi Sec NV. The wine pairings were courtesy of La Bodega de Manuel González Cuesta.

Following the dinner, guests were invited to join Brugal & Co.’s Brand Ambassador, Pavol Kazimir, for a tasting of the finest rums by Brugal family: Brugal Siglo de Oro and Brugal 1888.
