The 13th edition of the Festival Culinaire Bernard Loiseau saw a week-long event of lively competitions and culinary stars from Constance Hotels and Resorts in Mauritius, Seychelles and Maldives.

More than a culinary competition, Festival Culinaire Bernard Loiseau is a celebration of passion and creativity. Now in its 13th year, the most recent edition saw Michelin-starred Chefs from around the world, as well as Constance Chefs from six of their hotels in the Indian Ocean, reassembled in this week-long gastronomic extravaganza.

This very coveted culinary event goes beyond food and wine, offering guests a whole host of lively competitions, culinary cook-off’s, presentations, cooking classes and a whole lot more.

This year, the Constance Belle Mare Plage welcomed six promising and passionate Starred Chefs, all Michelin star holders, to meet the six “Constance Chefs” of Constance Hotels and Resorts in Mauritius, Seychelles and Maldives. From there they began the intense week of culinary showdowns, which saw victory for duo Michelin star chefs, Michael Reis and Arshil Soopun of Constance Ephelia Seychelles.

Their winning menu included; a canapé of brown butter confit taro with saffron, pear, raw palm heart, and macadamia nuts; followed by a seafood main of OSO organic shrimps from Madagascar, crispy cream cheese gnocchi, pineapple, papaya chutney and raw marinated gourd; and a meat main course of grilled back of Iberico pork with bell pepper jus, sweet potato cake, red onions and fruit mix guacamole, with traditional products from a Mauritian bbq.

A wonderful week for all participants, the magnificent 13th edition the Festival Culinary Bernard Loiseau, proved as nerve-wracking as it did satisfying.
