A masterpiece in Manila

With innovative and avant-garde dining concepts permeating the local restaurant scene, Manila is evolving and flourishing as a thriving foodie capital. City of Dreams Manila, a premier integrated resort in the bustling Entertainment City, in Parañaque, not only provides guests with exhilarating gaming experiences at the world-class casino, but likewise offers diners an exquisite gastronomic experience in over 20 restaurants at the property. Among the notable dining outlets are the three signature restaurants – The Tasting Room and Crystal Dragon at the Crown Towers Manila, and Nobu Manila at the first Nobu hotel in Asia, Nobu Hotel Manila, which offer indulgent culinary experiences through modern European, authentic Cantonese and Japanese-Peruvian cuisine, respectively.

The Tasting Room is an elegant and sophisticated space to explore haute cuisine and fine wines. A lavish degustation menu or a curated a la carte selection takes guests on a culinary journey, with artfully crafted dishes evoking irresistible flavors and avant-garde presentation. One of the restaurant’s signature dishes is the Duck Liver Terrine, a savory foie gras carefully balanced with intense and delicate flavor and texture, wrapped in spiced red wine jelly, served with port wine reduction sauce and strawberry sauce, apple compote, grapes, dried figs/fig chutney, strawberry macarons, strawberry marshmallow, lychee jelly, raspberry powder, finished with honey crisps, green apple chips and pain d’epices – a fitting introduction to an indulgent experience ahead.

Similarly noteworthy signature dishes that captivate the hearts and palates of diners are: the 52-Degree Egg cooked sous-vide in olive oil, then mixed with potato mousse, bacon-infused onion marmalade, ceps power and French black truffle; the Free Range Pigeon with gravy, beetroot, blackcurrant, white beans, Chioggia beet, dates and pea puree; and Saffron Ice Cream with Kalingo chocolate, mousse, passion-fruit-orange marmalade and pecan nuts.

Authentic Cantonese and regional Chinese cuisine take center stage at Crystal Dragon, with a menu ranging from the old world and traditional to the modern and exotic. The selection of dimsum can be best experienced through the combination platters, such as the Cantonese Steamed Three Dimsum Combination with steamed scallop, mushroom and spinach dumpling; minced duck with Sichuan pepper dumpling; and steamed crabmeat and abalone in squid ink dumpling.

A myriad of Cantonese culinary masterpieces include Roasted Suckling Pig, Peking Duck, crispy pork skin on steamed mantao buns and hoisin sauce; stir fried Chicken with Walnut and Hoisin sauce; and Wok-Fried Ohmi Wagyu Beef with chef’s special sauce. Diners can pair the delectable Chinese fare with choice of traditional oriental tea, to punctuate the dining experience.

Manila’s connoisseurs are fortunate to have the world’s most recognized Japanese-Peruvian dining haven at City of Dreams Manila. Nobu Manila of Chef Nobu Matsuhisa fame showcases the celebrity chef’s signature courses as well as new dishes infused with locally-sourced ingredients. Nobu’s 36 restaurants around the world are known for the freshest and topnotch seafood, sushi, and sashimi. The Ocean 12 platter is the ideal way to sample the freshest catch spanning seas from east to west, containing toro, kampachi (Japanese amberjack), salmon, Japanese mackerel, scallop and squid.

Some of the must-try Nobu signature dishes are the Black Cod Miso, Yellowtail sashimi with jalapeno, White Fish Tiradito made with local grouper topped with a dry miso crumble and crisp garlic chips; Scallop with Jalapeno salsa, Lobster with wasabi pepper or uni butter and Rock Shrimp Tempura with creamy spicy sauce and premium Japanese Wagyu beef.

Also not to be missed are more of Crown Towers and Nobu Hotel’s dining spaces – Crystal Lounge and Nobu Lounge, and al fresco poolside spaces Breezes and Wave, respectively.

An all-day buffet at Hyatt’s signature restaurant, The Café, highlights global cuisine in six finely curated stations: The Italian, The Grill and Griddle, The Deli, The Asian, The Comfort Food and Favorites, and The Pastry. The hotel’s lobby lounge likewise serves an international snack menu and well-crafted cocktails.

The Shops at the Boulevard, City of Dreams Manila’s retail and dining strip on the main casino’s upper ground level, serves as a mecca of international and local cuisine.
