Danish-born Rasmus Kofoed is an acclaimed Nordic chef, whose cuisine is lucid, light anddynamic, exploring nature’s perpetual change and beauty. Inspired by a childhood spent in nature,followed by years of dedication in fine tuning his craft.
His deep connection to the land, his respect of nature and his understanding of ingredients allowshim to honor and elevate local ingredients into an intricate tapestry of flavor profiles, textures andunique components. His mission is to create meals that involve all of one’s senses and restore,challenge and enrich his guests dining experience.
Educated as a chef at Hotel D’Angleterre, Denmark, in 1997, chef Kofoed began his culinary careerworking at two Michelin star restaurant Scholteshof in Belgium.
In 2003, chef Kofoed was noted for his culinary excellence as ‘Chef of the Year’ in Denmark. Thiswas the first of many awards for Kofoed, who then went on to become the triple winner of thesilver, bronze and gold medals of Bocuse d’Or, making him the most winning chef in Bocuse d’Orhistory.
In 2005 Rasmus became Head Chef at Hotel D’Angleterre, in Copenhagen and later openedRestaurant Geranium, which was awarded it’s first Michelin star in 2008. The second Michelin starcame in 2013, followed by three stars in 2016. Under the helm of chef Kofoed, restaurant Geraniumentered the prestigious Worlds 50 Best Restaurants list and now stands at Number 28.
