Born in Manila, Paul Qui now lives in Austin, Texas as Chef Owner of qui. Trained in classic French and Japanese cuisine, Paul takes a modernist approach towards food, where there are no boundaries. The entire restaurant prides itself on its organic, simple design. Dishes hold flavours at their forefront, with presentation coming close behind with clean aesthetics and fresh flavours.
Starting as an intern, Paul worked his way up the ranks of Austin-based restaurant Uchi to Chef de Cuisine and later opened Uchiko as Executive Chef. Paul learned to adapt traditional Japanese dishes to local ingredients, combining techniques from South East Asian and European cuisine.
Chef Qui is currently the chef owner of his flagship restaurant, qui, which opened in late Spring 2013. He is also the co-founder and chef owner of East Side King, a group of Asian-inspired street food trailers and restaurants in Austin, Texas.
