Fischer’s background offers an incredible selection of some of the best kitchens in the world from Victor’s Gourmet Restaurant Schloss Berg, a three-Michelin star restaurant where he worked under Christian Bau, to three years as sous chef with Dirk Luther at the “Restaurant Meierei Dirk Luther” in Glücksberg, which boasts two Michelin stars. In his first position as chef de cuisine at the gourmet restaurant “La Terrasse” at the Parkhotel Bremen, his talent led to his inclusion in the league of chefs with highest creativity and best possible preparation, the Gault Millau’s highest class for the most outstanding chefs. One star in the Guide Michelin, 17 points in the Gault Millau and seven pans in the Gusto as “best restaurant in Bremen” represent Fischer’s incredible achievement to date and the experience he will bring to Yu Nijyo.
