The juxtaposition of tradition and modern flair that characterises Relais & Châteaux Le Saint-James Bouliac’s architecture is reflected in the Michelin-starred cuisine of Nicolas Magie, who creates dishes of original and surprising combinations.
After his great-grandmother, his grandmother and his father before him, Nicolas Magie is the fourth generation of his family to make the kitchen his kingdom.
He left his Michelin-starred restaurant in Cenon (La Cape) for the kitchens of Le Saint-James.From Bordeaux to Paris, his career is characterised by his strong affinity for the Aquitaine region: as an apprentice with Michel Gautier, Rouzic restaurant, Bordeaux (1 Michelin star) – Michel Carrère, La Chamade in Bordeaux (1 Michelin star) – Le Pavillon des Boulevards in Bordeaux (Denis Franc) 1 Michelin star – Le Miramar in Biarritz (Basque Country) Mr Gauzère, 1 Michelin star – Hotel de Crillon (Christian Constant) 2 Michelin stars for a year and a half.
His military service was with the Cercle National des Armées. In the evening, he worked with François Clerc. He then opened the Le Wadja restaurant (wine bar) in Paris’ 6th arrondissement before becoming Sous-Chef, then Chef at François Clerc (Les Bouchons) in the 5th arrondissement.
In July 1999, he returned to Cenon, where he opened the La Cape restaurant in a house.This gourmet restaurant, rather out of the ordinary, soon became a famous dining site and in 2004, Nicolas Magie was awarded a Michelin star.
Thirteen years later, he again confirmed his attachment to the right bank by joining Le Saint-James, succeeding Michel Portos, who returned to his native land of Marseille.
