Three Michelin-starred Grand Chef Relais & Châteaux,Michel Guérard has retained his stars for 37 years – his restaurant, Les Pres d’Eugenie is situated within his property in Eugenie-les-Bains, South-West France. He is one of the founders of nouvelle cuisine and the inventor of slimming cuisine, a revolutionary approach to healthy cooking, which has remained at its forefront since the 1970’s.
“Taste and enjoyment lie at the heart of all French cooking”, says Guérard ”so I am drawn to conclude that any plan to reform eating habits must not lose sight of the fact that people want to enjoy their food”.
Having served his apprenticeship at the patisserie of Kelber Alix, he worked in numerous kitchen in France while maintaining a job as a pastry chef. In the ‘60s, chef Guerard opened Le Pot-au-Feu in Paris, where he earned his first and second Michelin stars. Upon meeting his wife, Christine Barthelemy, Michel moved to Eugénie-les-Bains, restoring a property to accommodate his restaurant and Christine’s spa. This move resulted in the birth of chef Guerard’s Cuisine Minceur, or slimming cuisine, and the three Michelin-starred Les Pres d’Eugenie.
Cookbook author as well, Michel has sold millions of healthy cuisine cookbooks.
