Matthias Diether’s modern, light cuisine is based on French haute cuisine with international and regional influences. Before he became the chef de cuisine at gourmet restaurant First Floor based in Hotel Palace Berlin, Diether worked in the United Arab Emirates from 2005 to 2007 and was named the “young chef of the year” of the Middle East by Times. Diether trained at Hotel Intercontinental in Stuttgart and later with Lothar Eiermann at Wald- & Schlosshotel Friedrichsruhe for two years. He then joined Ristorante Da Gianni in Mannheim, working as Entremetier, and in 2000 he started at Harald Wohlfahrt’s Schwarzwaldstube in Hotel Traube Tonbach as chef de partie. After he year he took the same position at Dieter Müller’s restaurant in Schlosshotel Lerbach in Bergisch Gladbach, where he stayed for two years, until he joined Sven Elverfeld at restaurant Aqua at Hotel Ritz-Carlton, Wolfsburg, as sous chef.

Diether describes his own style: “I emphasise the essentials, honest products are in the foreground and every creation is well thought through.”
