Chef Martijn Kajuiter inherits a love of cooking from his parents, who owned a restaurant in the countryside in north Holland.
At 17 years old, Martijntrained under Dutch master chef, Wynand Vogel, and later went on to work underchef Gert Jan Hageman at The Vermeer restaurant, which gained one Michelin star during his Martijn’sresidency.
In 1995 Martijn moved to London where he worked at L’ Ortolan and The Waterside Inn under John Burton Race and Michel Roux. He then joined the three Michelin star restaurant Le Tante Claire, under Pierre Koffmann and after six months joined The Restaurant at The Hyde Park, also holder of three Michelin stars.
At 24, Martijn returned to Holland where we worked at Les Quatre Canetons as head chef, before moving to Restaurant De Kas, also as head chef, with the guidance, once again, of chef Gert Jan Hageman.
In 2007, Martijnset his sights on a new challenge, this time inIrelandat The Cliff House Hotel, County Waterford. The hotel opened in May 2008 and within 18 months the restaurant was awarded its first Michelin star.
The Cliff House Hotel has its own small nursery, where authentic Irish herbs and Mediterranean vegetables are grown in the summer and various kinds of lettuce in the winter.
