After completing her training at the Ferrandi School of Culinary Arts in Paris, chef Lanshuembarked on her career under the guidance of some of France’s most celebrated chefs, including and at Michelin-starred restaurants such as Les Ambassadeurs and California’s The French Laundry.
Today, chef Chen employs delicate cross-cultural fusion flavours and textures as executive chef of her restaurant, Le Moût. Located in Taichung city in west Taiwan, Le Moût has presided in the fine-dining scene in Asia since its opening in 2008. Combining French culinary traditions with the local ingredients and influences that she grew up with, chef Chen is renowned for her uncompromisingly high standards and innovative dishes.
Chef Chen has been named Veuve Clicquot Asia’s Best Female Chef for 2014, as part of S. Pellegrino & Acqua Panna’s Asia’s 50 Best Restaurants. She is considered an inspiration to other female chefs, pushing boundaries and showing how passion and dedication can create flawless culinary practices.
In 2008, she opened the restaurant Le Moût in Taichung, Taiwan, where Lanshucreates her “Haute Cuisine,” featuring the ultimate balance with her Taiwanese roots and the art of French cuisine. She plays with the local seasonal specialties and whatis available amongst the best in the world at that particular time. The balance withlayers of finesse versus the pitches of flavors unveils the essence of her philosophy,as well as the most poetic part of her creation.
