Grand Chef Relais & Châteaux, Holgar Bodendorf’s restaurant BODENDORF’S at the five-star Landhaus Stricker Hotel on the island of Sylt, northern Germany, has gained its chef several awards, including a Michelin star, 18.5 Gault Millau points and 3.5 in the Gault Millau guide.Situated on the island of Sylt in northern Germany, the restaurant ispart of the five-star hotel Landhaus Stricker, serves elegant gourmet cuisine with French accents in a beautiful, contemporary setting.
Since 2002, when it was awarded a Michelin star, restaurant BODENDORF’S has gained its chef a collection of awards, including 18.5 Gault Millau points, a place among the top 50 chefs in the Gourmet Atlas, 3.5 points in Gourmet Guide and four stars in the VARTA Guide.
Chef Bodendorf takes it upon himself to remain at the centre of the kitchen at restaurant BODENDORF’S, while his team of sommeliers and restaurant managers work to provide guests the highest service, as he takes themon their culinary journey.
Before becoming head chef at restaurant BODENDORF’S, he worked in some of the Germany’s most celebrated kitchens, including: Hotel Atlantic and the Landhaus Scherrer in Hamburg; Petermann’s Kunststuben in Zurich and Da Gianni in Mannheim. He also spent five years as Head Chef at restaurant Tappe, also on the island of Sylt, which was awarded its first Michelin star under his helm.
What was your most emotional culinary experience?
The best thing that can happen to a chef on a personal level; the first time I cooked together with my son. He was 7 years old at the time and I was working as a guest chef in Ireland. We made roasted scallops with a hazelnut cream and maple syrup vinaigrette.
What was the most amusing incident in your kitchen?
When I cooked together with a mentor, one of the greats of the craft – we had combined his menu with mine – and he ended up burning the duck. I thought it was hilarious and still smirk a little today when I think about it.
What would you advise hobby chefs?
Use fresh, high-quality ingredients and always make sure that your frying pan is hot enough.
