Born in Stockholm, Sweden, Fredrik Berselius arrived in New York to pursue his dream of becoming a world-renowned chef and to bring Scandavian cuisine, stateside, in 2000. Since then he’s achieved both, in the form of a 1 Michelin star restaurant, Aska, in the heart of New York’s hippest borough, Brooklyn, which serves food that speaks reams of Fredrik’s Scandi roots.
Frederik’s approach to cooking focuses on using the best possible, not to mention handpicked and local ingredients and takes inspiration from the Brooklyn’s oozing creativity.
The menu, which features dishes such as peas, trout and sorrel; squid, cucumber, and scallion; and duck, pine and rhubarb, is based on what is available to Fredrik at the market and what is grown at restaurant Aska and its surrounding areas.
Recently awarded his first Michelin star in the Michelin Guide NYC 2014 on 1 October 2013, Fredrik also celebrated being crowned Food and Fun Chef of the Year 2013 at the annual Reyjavik food festival. Read about what FOUR wrote aboutchef Berselius in the International Edition .
